- 4 very fresh organic carrots
- a knob of grated fresh ginger
- 1 chilli, deseeded and chopped into bits. As hot or as mild as liked.
- 1 lemon or 2 limes, juice and zest. The fruit must be unwaxed and organic if possible.
- Glug of sesame oil or olive oil
- Pinch of Celtic sea salt.
- Few raisins.
- 1 tblspn black poppy seeds – or other seeds, toasted if large.
- Large handful of fresh coriander, chopped up.
- Mix all the ingredients except the honey and coriander.
- Leave to stand for upwards of 15 mins.
- Just before serving, add the coriander.
